OLD WORLD SOUP...

My Hardy Winter Soup...

3 tbs. olive oil
1/2 tsp. salt (or to taste, optional)
1 white onion diced
1 Tbsp minced garlic
4 carrots, thick sliced
2 hot Italian sausage links (slice up when you're ready to add it to soup)
2 14-oz. cans chicken broth
1 guart water + more as needed as soup cooks down
1 large can chopped tomatoes
1 large zucchini diced (optional)
1 15 oz can of your favorite beans (navy, white, garbonza)
1/2 cup rice
1 handfull of your favorite noodles

Method-
Heat oil & brown sausage over medium heat.
Add onion and garlic to sausage and cook until onion is translucent.
Add chicken broth, water, tomatoes, carrots, rice, drained beans, zukes & salt.
Bring to boil, then turn down to a simmer and cover for 30 - 45 minutes.
Toss in the noodles & cook for another 10 mins.

Serve with Old Country Style Bread

Note: Actually, I add anything that I have a taste for, into the soup. Sometimes, shreaded cabbage; other times, lentils. Lily...
