AHHHH, THE FIRST DAY OF SPRING...

WHEN THIS DAY FINALLY ARRIVES, I BEGIN TO THINK OF ALL THE GOOD THING THAT THE CHANGE OF SEASON BRINGS US. ONE OF MY FAVORITE SPRING VEGETABLE IS ASPARAGUS. HERE'S A LITTLE DISH THAT SHOULD PLEASE MANY OF YOU.

PLEASE REMEMBER - THIS IS NOT A HEART HEALTHY DISH!

BACON & ASPARAGUS SPRING OMELETS...
SERVES TWO

3 eggs, beaten
1 cup chopped asparagus
1/2 lb bacon
1+ tbsp butter
salt and pepper

Wash asparagus and cut into 1 inch size pieces. Melt the
butter and add asparagus. Saute until tender.

Fry bacon & crumble.

Add a little butter and a little bacon fat to a pan and heat.

Add beaten eggs. When the omelet has cooked to your liking, add the bacon and asparagus and finish the omelet.

If you wish, you can substitute crab instead of bacon, in this dish.

Serve with fresh fruit cups, raisin bread toast with cinnamon, and
Mimosas...
