A MARYLAND FAVORITE

Oysters Rockefeller...
from the Chesapeake Bay

12 Chincoteague Oysters

2 Ounces of butter
1 Package of spinach
1 Shallot or 1/4 sweet onion
1/2 Scant cup bread crumbs
2 Teaspoon Worchestershire sauce.
Parmesan Cheese & a little salt.
If you can find nice fresh parsley, chop a little, to suit your own taste.

Prep:

Chop the spinach & mince the parsley, shallot or onion. Saute in the melted butter for around 5 minutes.
Open the oysters & leave on the half shell. Spoon spinach mixture on each oyster then add a dash of salt & a dash Worchestershire sauce. Cover with the breadcrumbs and sprinkle with the Parmesan cheese. Place the oysters on a bed of rock salt in a shallow pan and broil for about 10 minutes.

Serve immediately with a glass of your favorite white wine.
