Here are a couple of cold weather - breakfast ideas given to me by my friend, Debbi, member/leader of ebay's "RASPBERRY ROSE SELLERS CLUB", that look good to me.


BAKED OATMEAL...

16 oz. bag frozen fruit (I used peaches)

18 oz steel cut oatmeal

1 1/4 cup unsweetened applesauce

1 cup water

1 1/3 cups milk

3 large eggs

1/2 butter, melted

1 teasp salt

1 tablesp cinnamon

1 teasp ginger

3/4 cup packed dark brown sugar

4 teaspoons baking powder

1 tablesp lemon juice


Put fruit into bottom of a greased 9x13 oven proof pan.Mix remaining ingredients and pour over fruit. Bake, covered at 300 degrees for 50 minutes and another 35-40 minutes uncovered.NOTE: Can be made in advance and then sliced into squares and heated in the microwave.

I have also cut this recipe in half for a smaller batch.



Swiss Oatmeal...

1 1/2 cups water

3/4 cup steel cut oats

3/4 cup fat free milk

6 oz plain low fat yogurt

2 Tbsp honey

1/4 teaspoon pumpkin pie or apple pie spice

1/8 teaspoon salt

1/2 cup dried fruit such as craisins(dried cranberries), blueberries, snipped apples,apricots, plums or bananas

1/3 cup chopped almonds (optional)


In a 2 qt sauce pan combine water and oats, Bring to boil, reduce heat. Simmer uncovered for 8 min.(oats will not be tender)Remove from heat, transfer into mixing bowl. Cool 5 minutes. Add other ingredients (except nuts) and stir.


Cover and chill for 12 hours or up to 3 days. Reheat and sweeten with splenda or brown sugar. Top with nuts if desired
